Whether they are here for a day or several days, the menu of delights surprises and satisfies them. Most of he items on the menu come from the Authentic Bed and Breakfast Cookbook. This cookbook contains hundreds of tried and tested recipes from our 38 Lancaster Bed and Breakfast Inns. Here are two recipes that our guests have raved about and hope you find the same as you prepare and serve them.
Shoo Fly Cake
Anyone who visits Lancaster County will surely have tried the famous Shoo Fly Pie. Its a delicate balance of molasses, flour, water, butter and baking soda. This cake verison uses the same ingredients but in a different way of preparation. You will enjoy this version with milk, ice cream or a hot cup of coffee.
4 C. flour 1 C. Molasses
2 C. brown sugar 2 C. boiling water
3/4 C. butter 1 T. baking soda
Grease and flour a 9×13″ pan. Mix first three ingredients together until well blended. Save one cup for topping. Add the molasses and mix in. Dissolve baking soda into boiling water and add to other ingredients. Pour slowly into baking pan. Batter gets very thin. Add the one cup of crumbs on top. Sprinkle with cinnamon. Bake 45 minutes at 350 degrees.

Roasted Sweet Potatoes with Rosemary
This is a favorite when we serve an egg dish like Wisconsin Egg or Italian Quiche. The home fills with the sweet smell of Rosemary and sweet potato. Some of our guests put a little butter on these potatoes to enrich the flavor. Of course this can be a great sidedish for evening meals.
3 sweet potatoes, peeled, cut into small chunks,
salt and pepper to taste
Olive oil, ( 3 to 4 Tablespoons)
Fresh rosemary, chopped fine (I use dried leaves)
Mix all ingredients together on a half sheet pan. Roast in oven at 400 degrees for 40 minutes, mixing every so often. Serves 6
Note: This works well with any kind of potato or yams. Enjoy!
